Pancake Ice Cream Sandwiches w/ Maple Bacon Ice Cream

 At Home Shoppe, you'd be hard pressed to find anything food-related that we love more than breakfast and ice cream. Well, maybe ice cream for breakfast but we digress--we don't mess around when it comes to brunch and ice cream. That said, when we had the idea to combine our two loves into this amazing savory and sweet ice cream sandwich, the skies opened up and everything was right in the world. We promise, after the first bite, you'll be wondering where this dessert (breakfast?) has been all your life.


Pancake Cookies


  • 3 Cups Pancake Mix
  • 2 Eggs
  • 1 1/2 Cups Sugar 
  • 1/2 Cup Butter
  • 1 tsp Vanilla Extract


    Step 1.) Beat eggs, sugar, butter and vanilla on medium speed until creamed.  
    Step 2.) Stir in pancake mix with a spoon and mix until incorporated. 
    Step 3.) After refrigerating the dough for at least an hour, roll into 1 inch balls and bake at 400 degrees F for 8-10 minutes. Set aside.

Maple Bacon Ice Cream


  • 1 Cup Maple Syrup
  • 6 Slices of Bacon
  • 4 Cups Half and Half
  • 5 Egg Yolks
  • 1 Cup Sugar, divided.
  • 1/4 Cup Caramel Sauce
  • 1 Tbsp. Vanilla Extract


    For the bacon:

    Step 1.) After lining a pan and pre-heating oven to 450 degrees F, bake your bacon until crispy. When cool, chop your bacon into small pieces. 

    Step 2.) Warm caramel sauce in a saucepan or microwave and drizzle over bacon. Let cool then chop the candied pieces into small chunks.



    For the ice cream base:

    Step 1.) Reduce maple syrup to 1/2 cup over medium heat. Set aside.

    Step 2.) Heat half-and-half and 1/2 cup of your sugar over medium heat  until small bubbles form around the edges of your pan.

    Step 3.) In a separate bowl, whisk egg yolks and vanilla with the other 1/2 cup of sugar together. Then add your half-and-half mixture, whisking as you pour to incorporate.

    Step 4.) Then, take this egg mixture and pour back into your pan. Stir mixture over heat until it reaches 170 degrees F on a candy thermometer making sure not to let it boil.

    Step 5.) Whisk into maple syrup. Once incorporated, cover with parchment paper and refrigerate for a few hours.


    Make ice cream according to manufacturer's directions, adding the candied bacon in the last few minutes until incorporated into the mixture.

    Final step:  Sandwich a generous scoop of ice cream between too cookies and enjoy!
